Eliot Bread

4.5 tsps yeast
2.5 cups water (105-110)
2 cups whole wheat flour
1 cup almond meal
4 cups all purpose flour
1 tbls salt
1 tbls butter, melted
1 eggwhite
1 tbls water

Mix yeast and water, let set 15 minutes.

Mix rest of ingredient and add yeast mixture

set in oily boil in warm place to rise

place moist towel on top

set for 1 hour or double in size

punch down

roll into (2) tight rolls

place on lightly greased and cornmealed baking sheet

set for 1 hour or double in bulk

bake 450 for 25 mins

brush with eggwhite/water mixture

bake additional 5 mins

cool on wire rack
