Roast green beans and cauliflower

1/2 lb green beans
1/2 head cauliflower
1 cup cherry tomatoes
1 tbls fat (bacon, ghee, oil, etc.)
1/2 cup milk
1/2 cup grated jarlsburg lite cheese (any meltable works)
salt
pepper

Steam the green beans and cauliflower in the microwave for a couple of minutes to precook (only if want to save time in oven). Mix all ingredients in 9x9 pan or whatever works.

Bake at 350 for 35 - 45 minutes

We add leftover onion rings and such. Any vegetables do and play around with the seasonings. This is easy! We serve it over Quinoa and poached fish or baked tofu
